Argentina: The Potato Manual, a world reference work on potato cultivation, is launched

"The Potato Manual – Crop of the Future," an updated 2025 edition, is now available in the country in Spanish. It stands as one of the most complete and comprehensive technical works ever published on this tuber.

Written by the renowned Dutch specialist Prof. Dr. Anton J. Haverkort and translated and updated by Prof. Dr. Daniel O. Caldiz, the work seeks not only to be a compendium of information, but a tool to improve the performance and quality of the crop globally.

Unlike other publications that address only partial aspects, this manual proposes a systematic approach based on a comprehensive formulation of performance. As explained by Dr. Daniel Caldiz, co-author of the book, the work integrates five key dimensions: Society, Plant, Propagation Material, Environment, and Management.

This framework helps us understand that the success of a crop does not depend on a single factor. For example, the societal pillar considers the rules and demands of the environment where the activity takes place, while the environment itself becomes especially relevant in the face of the challenges of climate change. The manual also delves into botany and genetics, crucial elements for the production of high-quality seeds.

The "cultivation of the future"

The publication highlights the strategic role of the potato in global food security. With global production reaching a record 320 million tons and some 18 million hectares under cultivation, the tuber surpasses cereals such as wheat, corn, and rice in its capacity to produce food per hectare.

Caldiz points out that, although potatoes were historically associated with famines due to a lack of technology, the situation is different today. Countries like China and India have transformed the market, going from being consumers of fresh potatoes to powerful exporters of processed products, such as frozen french fries.

A monumental and updated work

The book, published in July 2025, has nearly 600 pages and over a thousand high-quality photographs, diagrams, and infographics. Despite its scientific rigor—supported by 15 pages of bibliographic references—it is written in accessible language for a broad audience, including students, professionals, technicians, and decision-makers in the industry.

The authors emphasize that, while this is a comprehensive work, science is constantly evolving. Therefore, the manual provides a solid foundation for producers to incorporate technological innovations and make fine adjustments to their agronomic practices.

Recommendations for the sector: Look to the long term

During the book launch and a technical tour of potato-producing regions in Argentina, including Balcarce, Otamendi, and Mendoza, Dr. Caldiz shared a reflection with local producers. He warned against viewing potatoes as a "crop of opportunity."

Faced with situations of oversupply and falling sales—what he calls "the perfect storm"—the key lies in long-term planning and technological advancement. "We need to modernize with the goal of becoming more efficient... it’s the only way we can progress," the specialist stated.
